In 1971, María Castro, newly immigrated from the state of San Luis Potosí, México and mother of three young daughters, began making Queso Fresco for her family in the kitchen of her Houston, Texas home, modifying an old recipe she had learned from her mother on their family's Mexico farm. Word soon spread among friends and neighbors about the authenticity and quality of her cheese and requests for it began to trickle in. That trickle soon turned into a deluge.
Houston's Hispanic population continued to grow and as more and more Hispanics looking for the familiar products of their native lands discovered Mrs. Castro's cheese, her business grew as well. The family's garage was remodeled into a mini-factory to accommodate the demand for fresh Mexican cheese. Soon this site was outgrown. The family sold their home and purchased and renovated a run-down warehouse to house the growing cheese production. Castro Cheese Co., Inc. was incorporated in October 1977 and continued to produce the "La Vaquita" brand of Hispanic cheeses.
