Louisiana Fine Foods Company is a wholesale seafood distributor serving restaurants, grocery stores and other related food industries throughout the United States. They also produce Cajun/Zydeco Crawfish Festivals during the spring months in Texas and Florida, which has given them the nickname of the Crawfish Kings. Rightfully so, since they move over one million pounds of crawfish each year. The amazing thing is, when the proprietors first came from southern Louisiana to Texas they had to use crawfish as a garnish on the dishes they serve at their restaurants. Now they sell and cook about 75,000 pounds per week during peak season. Yep, these are the guys who introduced the little mud bugs to Texans.
